Tiramisu
30m Preparing | 2h Chilling | Serves 4
  • 100-150ml cold strong black coffee
  • 45ml Amaretto or Marsala wine (optional)
  • 2 medium eggs, seperated
  • 40 grams caster sugar
  • 250g mascarpone cheese
  • 250ml double cream
  • About 30 sponge fingers
  • Cocoa powder for dusting
  • 1/2 cup cold strong black coffee
  • 3 tbsp Amaretto or Marsala wine (optional)
  • 2 medium eggs, seperated
  • 3 tbsp caster sugar
  • 1 cup mascarpone cheese
  • 1 cup double cream
  • About 30 sponge fingers
  • Cocoa powder for dusting
Method
  • In a flat bowl, mix together the coffee and Amaretto/Marsala and set aside.
  • Next, in a large bowl beat the egg yolks and sugar until thick and pale. Add in and beat the mascarpone cheese thoroughly.
  • In a medium bowl, beat the double cream until stiff peaks form, and gently fold it into the mascarpone mixture.
  • In a metal bowl, beat the egg whites until soft peaks form, then quickly and gently fold it into the cream mixture without losing much volume.
  • Dip each sponge finger into the coffee mixture for about 2 seconds, then use each to cover the base of a glass dessert bowl. Once covered, spread the cream mixture over it and make a smooth surface.
  • Leave in the fridge to chill for 2 hours, and before serving dust it lightly with cocoa powder!
Banana Pancakes

  • 90g plain flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • 1 ripe banana
  • 120ml milk
  • 1 large egg
  • 30ml vegetable oil
  • 3/4 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • 1 ripe banana
  • 1/2 cup milk
  • 1 large egg
  • 2 tbsp vegetable oil
Method
  • In a small bowl, whisk together the flour, baking powder, salt and cinnamon (if using). Then set it aside
  • In a medium bowl, mash the banana with a fork until small chunks remain. Then add the eggs, milk and oil, and mix until just combined.
  • Pour the dry ingredients into the wet, and mix until just combined and leave to sit for a few minutes.
  • Heat a frying pan with oil on on medium-low heat. Spoon about a ladle of the batter onto the pan and fry until bubbles form on the surface. Then flip with a spatula and cook until golden-brown.
  • Now you can add anything you like! I recommend maple syrup or lemon and sugar.
Choc Ice-Cream

  • 75g cocoa powder (unsweetened)
  • 75g light brown sugar
  • 100g granulated sugar
  • 350ml whole milk (cold)
  • 500ml heavy cream (cold)
  • 2 tsp vanilla extract
  • 3/4 cup cocoa powder (unsweetened)
  • 1/3 cup light brown sugar
  • 1/2 cup white sugar
  • 1 1/2 cup milk
  • 2 cup heavy cream
  • 2 tsp vanilla extract
Method
  • In a chilled, medium bowl, whisk together the cocoa powder and sugars until combined.
  • Add the milk and whisk until combined, then stir in the heavy cream and vanilla.
  • Pour the mixture into an ice-cream churner while it's on and allow to churn for about 30 minutes until ice-cream consistency.
  • Transfer to an airtight container and freeze for at least 2 hours.
